Tondo Evo in the 3 and 5 L formats is contained inbag in boxesinstead of the traditional metal can: why?
1) The oil is protected from the air and therefore from oxidation, because the internal multi-layer vacuum bag of the bag in box compresses as the oil is drawn and the dispenser tap is equipped with a valve which prevents air reflux;
2)the bag in box does not require decanting of the oil, unlike the can which, once opened, must be completely emptied and decanted into the bottles;
3) The bag in box protects the oil from temperature changes thanks to the cardboard container which creates an insulating air chamber around the bag that contains it;
4) the bag in box is as solid and resistant as a can, but unlike this one it does not get dented and does not risk rusting;
5) the bag in box eliminates waste, as the oil is poured down to the last drop; furthermore it does not get dirty, as the tap is equipped with a spring system that closes it suddenly without spilling oil on the floor.
Tondo Oil
The cultivar(i.e. the type of olive) of our olive trees is theTonda Iblea ,nativeof the Iblei Mountains, which finds its ideal environment and maximum expression here.
Tonda Iblea is a cultivar that is very resistant to the cold temperatures that are frequent here in winter: consequently it is rather difficult for olive fly attacks to occur, making it possible not to resort to pesticides.
The degree of ripeness of the olives at harvest is at the beginning of veraison, which allows to obtain a good balance in the oil between the fruity/herbaceous notes, the spiciness and the bitterness, even at the expense of the production quantity to favor the quality.
Tondo oil is filtered before storage: why?
Filtration using cellulose cardboard filters is essential for stabilization over time and for the quality of the product.
In fact, filtration:
- reduce the free water content in order to prevent the degradation action of microorganisms.
- eliminates mesophilic biotic agents (aerobes, anaerobes and facultative anaerobes) naturally present in olives.
This guarantees that the oil maintains its health and organoleptic qualities over time.
Main features and combinations
PERFUME;penetrating, fresh and fruity with notes of green tomato, almond, artichoke, cut grass and fresh aromatic herbs.
TASTE : intense and full-bodied, harmonious and balanced, with the typical spicy and bitter characteristics of a quality Extra Virgin Olive Oil.
PAIRING : suitable for dressing salads and vegetables, it is excellent both with fish (cooked or raw) and with meat, to try in soups.

The Bottles
TheTondo bottles are made of dark glass, to protect it from the sun's rays.
The anti-spill cap, as required by law, is made of aluminium, avoiding the plastic capsule, with a view toenvironmental sustainability.
The bottle formats are:
100ml :ideal for small gifts in structures and to always have the oil at hand, even for transporting it on a plane.
250ml :it is the most convenient format to put on the table.
500ml :the kitchen format, for daily use, of great convenience.
