The Olive Groves
The olive trees grow on the different slopes of the small Sant'Andrea valley, at an altitude ranging from 500 to 600 meters above sea level, on calcareous-clayey soils with a volcanic base.
The olive trees are mostly centenary, with an estimated age of up to 300 years or more.
Organic - Regenerative Agriculture
The centuries-old olive trees are fertilized by us with the use of animal manure, from horses fed on pasture with wild herbs, in order to activate the microflora, provide nutrients and therefore rebalance the natural environment.
A light annual pruning is also carried out in spring, so as not to stress the plants and therefore encourage cyclical revegetation and organic growth of the fruits.
The soil is sodded only at the beginning of the spring season, to encourage the development of organisms and organic turnover; subsequently, vice versa, the growth of herbs, flowers and spontaneous essences is promoted, also a refuge for insects and animals, with a view to safeguarding the environment and biodiversity.
