The Olive Groves
The main cultivar in the area is Tonda Iblea, a native variety that finds its ideal habitat here. Other indigenous Sicilian varieties are also present, particularly Biancolilla, as well as Nocellara del Belice, Moresca, and Cerasuola — each with distinctive organoleptic characteristics.
The unique soil and climatic conditions of the olive groves from which our oils are produced allow us to avoid the use of pesticides and ensure a completely natural product.
Organic - Regenerative Agriculture
This approach goes beyond simple sustainability, aiming to actively maintain and regenerate the richness of the soil and the surrounding ecosystem.
We fertilise our olive trees with manure from free- grazing horses fed on wild grasses, which enriches the soil with organic matter, promotes the development of beneficial microflora, and preserves the natural balance of the environment.

Each spring, we carry out light pruning to stimulate the trees’ natural growth cycle while minimising stress on the plants. The soil is cultivated in a natural way, with tilling performed only at the beginning of the season to encourage the spontaneous growth of plant species that support biodiversity, creating a healthy and thriving habitat for pollinators and wildlife.
