The Olive Harvest

Harvesting usually takes place in October, depending on the optimal stage of olive ripeness. It is crucial to accurately identify the moment when the polyphenol content — powerful natural antioxidants — reaches its peak.
To preserve the integrity of the fruit and the health of the trees, harvesting is carried out exclusively by hand or with gentle mechanical aids. Each olive is carefully selected directly in the field, with any damaged fruit discarded to ensure that only the finest drupes reach the mill and contribute to the superior quality of our oil.


Transport

Handled with care, the olives are cold-pressed in a technologically advanced mill that ensures a fully controlled process and enhances the oil’s organoleptic qualities.



The Milling

The rapid, low-temperature kneading process preserves the natural aromas of the fruit and maintains all the nutraceutical properties of premium extra virgin olive oil.



Filtration

Once extracted, the oil is filtered to remove any remaining organic residues and micro-particles of water, ensuring long- term stability.


Conservation

It is then immediately stored in stainless steel containers within a temperature- and humidity-controlled environment, with the addition of inert gas (nitrogen) to prevent oxidation.

Protected from light, air, and thermal fluctuations, the oil retains its original organoleptic characteristics — as if it had just been freshly pressed.


The Packaging

The Tondo Oil rests in the storage tanks, maintaining its organoleptic properties unchanged.

Only when necessary is Tondo bottled and the strictly necessary packages prepared.


The Bottles

The Tondo bottles are made of dark glass, to protect it from the sun's rays.

The anti-spill cap, as required by law, is made of aluminium, avoiding the plastic capsule, with a view to environmental sustainability.

The bottle formats are:

100 ml : ideal for small gifts in accommodation facilities or for wedding favors and to always have the oil at hand, even for transporting it on a plane

250 ml : it is the most convenient format to put on the table

500 ml : the kitchen format, for daily use, of great convenience


Bags in Box

Tondo Evo in the 3 and 5 L formats is contained in bag in boxes instead of the traditional metal can: WHY?

1) The oil is protected from the air and therefore from oxidation, because the internal multi-layer vacuum bag of the bag in box compresses as the oil is drawn and the dispenser tap is equipped with a valve which prevents air reflux;

2) the bag in box does not require decanting of the oil, unlike the can which, once opened, must be completely emptied and decanted into the bottles;

3) The bag in box protects the oil from temperature changes thanks to the cardboard container which creates an insulating air chamber around the bag that contains it;

4) the bag in box is as solid and resistant as a can, but unlike this one it does not get dented and does not risk rusting;

5) the bag in box eliminates waste, as the oil is poured down to the last drop; furthermore it does not get dirty, as the tap is equipped with a spring system that closes it suddenly without spilling oil on the floor.
