The cultivar (i.e. the type of olive) of our olive trees is the Tonda Iblea, native to the Iblei Mountains, which finds its ideal environment and maximum expression here.

Tonda Iblea is a cultivar that is very resistant to the cold temperatures that are frequent here in winter: consequently it is rather difficult for olive fly attacks to occur, making it possible not to resort to pesticides.
