Tondo Olio is filtered before storage: why? Filtration using cellulose cardboard filters is essential for stabilization over time and for the quality of the product.
In fact, filtration:
- reduce the free water content in order to prevent the degradation action of microorganisms.
- eliminates mesophilic biotic agents (aerobes, anaerobes and facultative anaerobes) naturally present in olives.
This guarantees that the oil maintains its health and organoleptic qualities over time
