Why is correct conservation important?

EVO oil fears light, heat and oxygen (present in the air).

As soon as it leaves the mill, the Tondo oil is stored in suitable stainless steel containers, in a controlled humidity and temperature environment and with a "cap" of inert gas (nitrogen) which avoids any oxidation, even when the tank is partially emptied for packaging.
